~WHY IS JAPANESE WAGYU DIFFERENT? ~
Wagyu is known by prefecture, in Japan. We use Kagoshima and Matsusaka Grade 5, regarded as the very best in the world. The high fat-to-meat ratio results in meat that melts at low temperature, to create a sublime mouth and flavour experience that cannot be matched by any other wagyu in the world!

~ WHAT AUSTRALIAN WAGYU DO WE USE? ~
All wagyu is about fat! The higher the grade of wagyu, the lower the melt temperature of the fat. We only use Australian full blood wagyu AA5+ or AA9+ from sirloin and topside cuts. Sirloin has medium tooth density, so the higher the grade, the silkier the mouth feel. Topside will be denser but has a fuller flavour. We serve this Yakiniku style, sliced thinly and rolled with vegetables.

~ WE HAVE FOOD ALLERGIES AND GF INTOLERANCES ~
While we will endeavour to accommodate requests for special meals for customers who have food allergies or intolerances, we cannot guarantee completely allergy-free meals. This is due to the potential of trace allergens in the working environment and supplied ingredients. We can provide gluten-free soya sauce and menu items without gluten-based ingredients. Ask your server for the options available. Please tell our staff of your specific needs.

~ IS YOUR FOOD HALAL ~
All our meat and chicken are sourced by our meat suppliers from Halal certified abattoirs. Halal certifications are notated on the boxes and copies of certificates are available for review, if required. We do not have pork on our menu. We are NOT a halal certified restaurant. We can remove alcohol from our cooking on request, so please let us know.

~ SUSTAINABILITY~
At every opportunity we choose sustainable food sources, buying sea farmed or aquacultural products that meet our exact specifications. We only buy wild catch fish where it does not pose a threat to the sustainability of the source.

~ SPECIFICATIONS~
The Rocks Teppanyaki prides itself on providing consistent product. To achieve this, we have established exacting specifications and requirements for the types and grades of foods we buy, covering seafood, fish and meat. We make all our signature sauces and condiments on the premises. Our secret recipes are well tested to ensure their uniqueness and high standards of flavour and quality. We use specific Japanese sourced products to ensure that illusive umami quality in our dishes. Dishes with vegetarian and vegan options are identified with a (V).
